Overview

Description

Watermelon (Citrullus lanatus) is a warm-season, frost-sensitive annual vine grown primarily for its large, fleshy fruit. It belongs to the Cucurbitaceae family, which also includes cucumbers, squash, pumpkins, and melons. As an annual plant, watermelon completes its life cycle within a single growing season, dying back over the colder autumn-winter period.

The plant has a prostrate, trailing growth habit, producing long, sprawling vines that commonly reach 2–4 m (6.5–13 ft) in length, depending on the cultivar (cultivated variety) and growing conditions. Stems are angular, ridged, and covered with coarse hairs, providing limited protection against herbivory and excessive transpiration. The vines branch freely and root at nodes when in contact with moist soil, contributing to the plant’s wide ground cover. The leaves are large, alternate, and deeply lobed, typically 15–25 cm (6–10 in) across. They are rough-textured and borne on long petioles (leaf stems), forming a dense canopy that shades developing fruit and suppresses competing vegetation. Leaf color ranges from medium to dark green, reflecting the plant’s high photosynthetic demand during rapid vegetative growth.

Watermelon plants are monoecious, producing separate male and female flowers on the same plant. The flowers are yellow, funnel-shaped, and about 2–3 cm (0.8–1.2 in) in diameter. Male flowers appear first, followed by female flowers, identifiable by the small, immature fruit (ovary), which looks like a small melon-shaped bump at the base of the flower. Female flowers develop into fruit after bees transfer pollen from the male flowers.

Pollination in watermelons is carried out by insects, primarily bees, and is essential for proper fruit set and uniform fruit development. Each female flower remains open and receptive to pollination for only one day. The more visits from bees a flower receives, the more seeds are produced in the fruit, the larger the fruit size, and the lower the likelihood of misshapen fruits. For proper fruit development, a female flower requires 500-1000 pollen grains, typically achieved by about eight bee visits for seeded watermelons and twenty-one for seedless watermelons. More visits are needed for seedless watermelons because pollinators carry both infertile pollen from male flowers and fertile pollen from seeded varieties. Cool weather, rain, or windy conditions reduce bee activity, while low temperatures can prevent pollen development and its release, thereby impairing pollination.

The watermelon fruit is a pepo, a type of modified berry characteristic of cucurbits. Mature fruits vary widely in size, shape, rind thickness, and flesh color, depending on the cultivar, ranging from small “icebox” types weighing 2–4 kg (4.5–9 lbs) to large varieties exceeding 10 kg (22 lbs). Rinds are typically green with lighter striping or mottling, while flesh may be red, pink, yellow, or orange. Seeds are embedded throughout the flesh and vary in color and size, and both seeded and seedless cultivars are widely grown.

Basic Growing Information

Watermelon is a warm-season crop that grows best at temperatures between 18-28°C (65-82°F). The best vine growth, flowering, and fruit development occur when daytime temperatures remain above 24°C (75°F). Watermelon vines can grow very large and require a fair amount of space. They grow best under consistently warm conditions and require full sun and evenly moist, well-drained soils to support their rapid growth and high water demand during fruit enlargement. Excessively wet or compacted soils increase the risk of root diseases and poor plant growth.

Watermelon seeds do not germinate well in cold soil and require soil temperatures of at least 18–21°C (65–70°F) before planting. Cool conditions slow germination, delay flowering, and reduce fruit set, while frost kills plants outright because they are frost-sensitive. In regions with short growing seasons, start seeds indoors approximately 3–4 weeks before the last frost date in your area, and transplant seedlings into the garden only after the last chance of frost has passed and the plants have developed their first set of true leaves (ideally transplant young plants with 4 to 6 true leaves, with plants wider than they are tall, strong-looking, and slightly hardened to outdoor conditions). Seeds sown either indoors or outdoors require lightly moist soil for germination. Care should be taken to avoid overwatering, as seeds are prone to rotting. Seeds should germinate in 3–10 days, depending on the soil temperature.

Watermelon will yield best if grown in a light, well-draining soil, rich in organic matter and with a pH between 6.0 and 7.0. Watermelons are heavy feeders and need even soil moisture and regular fertilization.

Care and Maintenance

Watering Tips: Watermelons require consistent, deep watering, especially during flowering and fruit development. Water the soil level rather than overhead to reduce the risk of fungal diseases. Soil should be kept evenly moist but not saturated, as water stress can reduce fruit size and lead to poor-quality harvests. Like most vegetable crops, the bulk of watermelon roots are found in the top 30cm (12 inches) of soil, so when watering, try to apply only as much water as the root zone (top 30cm or 12”) can hold. Going beyond this depth not only wastes water but also leaches nutrients from the soil. Proper watering may require several short-duration water cycles during the day.

Fertilization: Watermelons are heavy feeders and benefit from fertile soils prepared before planting. Incorporating well-decomposed organic matter (compost) and a natural fertilizer such as manure, before planting is recommended, followed by side-dressing with a natural, balanced nitrogen-containing fertilizer or manure early in vine growth, then reducing nitrogen-rich fertilizers once flowering begins to favor fruit development.

Pruning: Routine pruning is generally unnecessary for watermelons. Excessive pruning removes leaves, reducing photosynthetic capacity and overall yield. Limited removal of damaged or diseased vines may be beneficial, but healthy runners should be left intact to support fruit size and sugar accumulation.

Support: Watermelons are typically grown on the ground and do not require staking or trellising. Trellising is used only occasionally for small-fruited varieties and requires strong support and fruit slings (netting or mesh onion bags) to prevent vine breakage and fruit drop.

Harvesting

Harvest Time: Watermelons are harvested when 10–14 weeks after planting, depending on cultivar and growing conditions. There are a few indicators that the fruit is ripe, mature, and ready to harvest.

When the underside or “belly” of the melon turns from greenish-white to a buttery yellow or cream. This color change is especially noticeable on dark-green-skinned watermelons but is usually less noticeable on lighter-skinned varieties. The fruit also loses its shiny appearance on top and becomes dull when ripe.

Another way to determine ripeness is the browning of the pig’s tail (the light green, curly tendril attached to the vine near the melon). Often, the browning of the pigtail can be used together with the change in watermelon belly color to determine ripeness, especially for varieties whose belly color change is not easily seen. Note that in some varieties, the pig’s tail may turn brown 7 to 10 days before the melon is ripe, making this method unreliable for determining ripeness in those varieties. 

Ripe watermelons also produce a dull, hollow sound when tapped with your knuckles, while immature melons produce a metallic ring. Thumping or tapping the melon is generally not a good indicator of ripeness, as most people have difficulty distinguishing between the sounds.

Harvesting too early results in poor sweetness and flavor, while delayed harvest can lead to overripe, watery flesh. Expected yield for watermelon tends to be about 2 to 3 melons per plant.

Harvesting Tips: Harvest fruit by cutting the stem with a sharp knife or pruning shears rather than pulling, which can damage vines and nearby developing fruit. Leave a short section of stem, around 5cm (2 inches) attached to the watermelon to reduce the risk of decay. Handle fruit carefully to avoid bruising or cracking the rind, as physical damage significantly shortens storage life and increases the risk of rot.

Storage: Whole, uncut watermelons store best at cool temperatures between 10–15°C (50–59°F) with moderate humidity. Under these conditions, mature fruit can be stored for up to two weeks, depending on cultivar. Once cut, watermelon should be refrigerated at approximately 4°C (39°F) and consumed within several days to maintain quality and food safety.

Watermelon is primarily consumed fresh and is valued for its high water content, natural sweetness, and refreshing texture. The flesh is most commonly eaten raw, sliced or cubed, and served chilled, making it a staple fruit during hot weather. It is widely used in fruit salads, platters, and desserts, where its sweetness balances more acidic or aromatic fruits. In many regions, watermelon is also juiced or blended into smoothies and cold beverages.

Beyond fresh consumption, watermelon is increasingly used in savoury preparations. Cubed or sliced flesh is combined with ingredients such as feta-style cheeses, herbs, and acidic dressings to create salads that contrast sweetness with salt and acidity. Grilling watermelon briefly caramelises surface sugars and softens texture, allowing it to be used in savoury dishes, salads, or as a meat substitute in some recipes.

The rind, often discarded, is also edible and has traditional culinary uses. Pickled watermelon rind is a long-established preparation, particularly in regions with strong home-preserving traditions. The rind can also be cooked, stir-fried, or candied when properly prepared by removing the tough outer skin. Seeds from seeded varieties are edible when roasted and are consumed as snacks in some cultures.

Watermelon flesh contains natural sugars but is low in fat and calories, contributing to its popularity in fresh diets. Its culinary versatility extends from simple raw consumption to preserved, cooked, and blended forms, making it one of the most widely used warm-season fruits in home gardens and kitchens.
